Lasagna Soup

Ingredients

  • 2 tbs olive oil
  • 1 lb ground beef
  • 1 onion, chopped
  • 1 jar Erta’s Simple Sauce
  • 4 cups beef broth
  • 1/2 lb lasagna noodles
  • 3/4 cup heavy cream
  • 1/2 cup romano cheese

Topping

  • 1/2 cup romano cheese
  • 1 cup ricotta cheese
  • 2 tbs fresh parsley, chopped
  • 1/4 tsp pepper
  • 1/2 tsp salt

Instructions

Add the olive oil and beef to a large pot over medium heat and cook until browned. Stir in the onion and cook for 2 minutes. Add the Erta’s Simple Sauce and beef broth, then bring to a gentle simmer. Break the lasagna noodles into bite-sized pieces and add them to the pot. Cook on low for about 7 minutes, or until the pasta is tender. Remove from heat and stir in the heavy cream and romano cheese.

In a small bowl mix together the romano, ricotta, parsley, pepper, and salt. Dollop the ricotta mixture on top before serving.
